Directions:
Brushing the asparagus at the bottom third cut off the ends.
Sweat the chopped scarlets in the olive oil and butter.
Lightly fry the asparagus.
Deglaze with the white wine and with closed pan about 5 to 7 min. cook over medium heat.
Season with the balsamic vinegar, season with salt, pepper and nutmeg and serve with some Parmesan cheese to taste.
