Simple Dandelion Green
and Kale Stew

Ingredients:

I 2-1/2 - 3 lbs of Dandelions or kale washed, tough stems and ribs removed
6 strips of bacon chopped in strips
2 tablespoons coconut, olive or vegetable oil
2 medium yellow onions peeled and chopped
4 cloves garlic chopped or 1 tablespoon prepared chopped garlic
1 quart bone broth or other stock
3 bay leaves

generous pinch ground nutmeg


*It is fine to use substitutions for spices.

Hand Held Immersion Blenders


Directions:

1. Cut bacon into little strips and chop the onions.

 

2. Saute the bacon and onions and add pepper and garlic.

 

3. Chop the dandelions and kale and add to the mix and saute for 30 seconds

4. Add the broth and bay leaf and simmer for 30 minutes.

 

Serve as a side or as a soup and add a frankfurter or bratwurst.
