Christa's Goulasch
Soup

Christa's Goulash

This is a combination recipe that Christa Back, long time friend with this group, and always there to give me help translating when I need it. Her Mom's recipe she made in her restaurant in Germany, plus the first time I ever had a real Goulash Soup, called Gulyáleves was at Novak's Hungarian restaurant in Albany, Oregon where I was born. This combination was outstanding. I added a few things to what Christa gave me for the recipe.

My mom used to make this in her Restaurant in Germany.
..it was more beef , onions and broth like...brown Soupy kind of thing, but it was spicy...the Hungarian Paprika was spicy...if you can't find Hungarian Paprika you could use red Pepper. Everyone loved that soup and you had to eat bread with it....my Dad worked with a Hungarian and he came and showed her how to make it.

At the restaurant I had it with potatoes, and it was the best comfort food,
The flavors of the paprika, the caraway made the beef broth heavenly.
I also even in a brothy soup add just a bit of flour to give the broth a little body,
It doesn't look at all like a gravy
.

Ingredients:

2 lb Round Steak cut into 1/2 inch cubes (or small cut stew meat)
3 tablsp olive oil
2 Onions chopped medium dice
2 tablsp Hungarian Paprika
1/2 tsp Spicy Hungarian Paprika
(Red Pepper Flakes work well in it's place)
2 tblsp Flour
1 tablspoon Caraway Seeds
2 Bay Leaves
1-1/2 quart Beef Broth

Optional
2 -4 potatoes diced 1/2 inch about 4 cups

Beef tossed with paprika and flour

Cut the Round Steak into 1/2 inch chunks and toss with the paprika and flour

Chopped onions

Chop the onions 1/2 inch dice.

Browned Beef

Brown the Beef in the olive oil.

Add onions to beef

Add the onions, bay leaves, caraway and cook till the onions are tender.

Add Broth

Add the stock and simmer for 1 hour or till beef is tender.

Finished Goulash

5. Add the stock and simmer for 1 hour or till beef is tender. Now it is ready to serve,
Christa said it really needs a good hearty bread with it.

Potatoes diced

When the beef is starting to get tender add the potatoes if you want. They will take about
20 minutes to cook.

Biography of my grandma
Emma Block
From Germany with Love tells the story of my grandma, Emma Block, growing up in a little town in Baden/ Würtemberg, Germany near Heidelberg named Steinsfurt. Then at the age of 15 immigrating to the United States, taking a train with one of her sisters and brothers to Hamburg and sailing the Atlantic with other hope filled Germans wanting to make a life in the "New World". It was not easy but with good values learned in her German upbringing made a full life, had a wonderful family with lots of fun and celebration including the great German meals.
