1 bunch dandelion greens (equivalent to head of lettuce)
2 hard boiled eggs , small dice
1/4 cup olive oil,
1/4 cup water
1 /4 cup cider vinegar or similar
1/4 cup sugar
2 tablespoons whole grain mustard
1/2 teaspoon salt
1/4 teaspoon pepper
1 cup croutons
4 strips bacon diced, fried crisp(optional)
1 tomato cut in wedges (for garnish)
Note: You can use kale or other greens in place of dandelion greens.
