This dish is based on the Classic Frankfurter Greuner Sauce, and adding a touch of Mediterranean to the sauce.

 

 

Simple Dandelion and Kale Stew

Balance the complex hearty flavor of Dandelion and Kale greens with
some bacon, onions, tender them a little and some bone broth.

Braised Greens in Creamy Sauce with Boiled Eggs and Ham

This is a great technique to make any cooked greens or vegetable taste wonderful.


Germans love to celebrate Spring!

 

Think about it, Our German ancestors had to make it through the harsh winter,
and sometimes wondering if the gods or god
would bring back the sun.

They didn't have telescopes and portals of knowledge to access to bring light to their fears.

Also they had no "Fresh Vegetables" , Couldn't grab a package of salad, or
pick out some nice looking fruit at the local grocery.

So when the first green pushed through the ground and they saw rays of sunlight piercing
through the clouds it was time for celebration!

Different ways of celebration are found in German history,
Such as
Dandelion Festivals,

Spargel Festivals

and Frühlingfest!

I learned that Frühling meant Spring when I saw this

Dandelions and other Spring Greens
are not considered as much of a weed in Germany as they are in the United States.
Possibly because it was one of the first things you would see in the Spring.

Dandelions greens are very healthy as well.

st a friendly reminder: Dandelions give far more vitamin A-beta than carrots,
more lecithin than soybeans, more potassium than bananas, 
more iron and twice the amount of vitamin A as spinach.
Also, vitamins C and B, calcium, magnesium and more.

Spring Tonic Salad

Fresh Spring Greens with Bacon Dressing
and Soft Poached Egg

A Really Good Spring Tonic,
to cure any Winter Blues!

A Fresh Spring Greens Salad
with bacon, shallots and a soft poached egg.
That may sound different but it is very popular. The soft creamy egg yolk
adds ti the dressing.

You can use some of the stouter winter and early Spring Greens like
Dandelion, Frisee, Mizuna, Arugula for this, even Kale.

Dandelion Green Salad

There are many varieties of Dandelion Greens. I found these at a Farmer's Market and thought
they looked fun.

The salad dressing is fun, where you put fine chopped boiled eggs in the vinaigrette dressing itself. I find hard cooked eggs in a lot of German foods that you wouldn't normally see them in in the US. Like in a sour cream herb sauce, and even the grated egg yolk in cookies.

Initially I thought This was a strange idea, putting hot potato salad on to paper thin greens.
but the combination is so harmonious. Warm comfort food potatoes and bacon over tender crisp fresh tasting greens. Ummmmm!

A Spring Spargel Dinner

with Creamy Herb Sauce

I love the Spring and celebrating it with the special herb sauce that expresses the green season and the coming season of all kinds of fresh herbs that with just a touch they add those powerful notes of flavor to our foods. The most celebrated is probably the "Frankfurter Greuner Sosse".

I love the interesting choice of goodies that the Germans pick for dishes like this. Boiled eggs, boiled potatoes, asparagus, ham slices. I expanded on the idea and added some tomatoes and avocado, but it could be anything. I also expanded on the Frankfurter Green Sauce that I based this sauce on, blending in some ideas from Tzatziki sauce. Mediterranean foods have become a big part of Germany with their special twist on them.

Biography of my grandma
Emma Block
From Germany with Love tells the story of my grandma, Emma Block, growing up in a little town in Baden/ Würtemberg, Germany near Heidelberg named Steinsfurt. Then at the age of 15 immigrating to the United States, taking a train with one of her sisters and brothers to Hamburg and sailing the Atlantic with other hope filled Germans wanting to make a life in the "New World". It was not easy but with good values learned in her German upbringing made a full life, had a wonderful family with lots of fun and celebration including the great German meals.

Simple Dandelion Green
and Kale Stew

You have to have some reverence for Winter and Spring greens
as they are hearty enough to make it through harsh weather.
As a farmer it was so cool to go out in the snow and pick kale from the garden
and cook it in the nice warm house for dinner.

This is a 20 minute fun lunch or supper that takes the beautiful complex flavors of the Winter and Spring Greens and balances the texture with a little hot bone broth, and onions and bacon.

Greens Braised in Creamy Sauce
with
Boiled Eggs and Ham

This is a cooked dish that is a big part of my heritage and very popular style of doing
vegetables in Germany. Whether it is Kale, Spinach, Kohlrabe or carrots
this style of cooking elevates this a "boiled veggie" that lacks flavor.

My grandma would use this simple technique to fry onions and a bit of bacon or oil and pepper and then add the greens or vegetable, cook it till tender then add a bit of milk and flour and thicken it up. You can use instead of milk you can use stock or water. You can also use cream or a bit of sour cream to finish it.

This is a good recipe here for creamed spinach that was one of my father's favorites that my grandma made all the time.
