Spring Tonic

Early Spring Greens with Bacon Dressing
and Poached Egg

Our German Recipe Cookbook

Ingredients:

For 2 people

For the Greens
Frisee, Dandelion Greens, Kale , Escarole, Mitzuna, or any sturdy greens

The Dressing:
4 Strips of thick slice smoked bacon
1/2 cup shallots or red onion minced
3 tblsp red wine vinegar
2 tablespoons whole grain mustard
2 tblsp olive oil

Poached eggs, at least 1 per person

Good Bread as always for a good German meal

Spring brings lots of interesting plants that are strong tasting but green, and strong flavors can be balanced with
the sweetness of bacon and sauted shallots, tanginess of mustard and red wine vinegar and a nice poached egg, which
the soft yolk blends with the dressing.

 

This is Frisee. It is very similar in flavor to the taste of Dandelion greens and Mizuna.

 

I sauted the shallots in the olive oil with some pepper. Then I added the thick slice smoked bacon.

 

 

When the bacon is nicely browned add the vinegar and mustard

 

I added the greens for just a spin, blending in the dressing and tenderizing them a bit.

Top it with a poached egg. Two if you like.

 

In this salad I used a blend of dandelion greens and kale

Biography of my grandma
Emma Block
From Germany with Love tells the story of my grandma, Emma Block, growing up in a little town in Baden/ Würtemberg, Germany near Heidelberg named Steinsfurt. Then at the age of 15 immigrating to the United States, taking a train with one of her sisters and brothers to Hamburg and sailing the Atlantic with other hope filled Germans wanting to make a life in the "New World". It was not easy but with good values learned in her German upbringing made a full life, had a wonderful family with lots of fun and celebration including the great German meals.
