Ingredients:
1 Cucumber
1/2 teaspoon Salt
2 cups Watermelon chunks
3 slices Purple Onion
A few teaspoons, Mint or Parsley
1/2 cup Feta Cheese Crumbles

Dressing:

2 tblsp Olive Oil
1/2 cup Vinegar
1/2 cup Water
1/3-1/2 cup Sugar

Directions:

 

 

You can cut the cucumbers in any way you want. I like to score them with a channel cutter.
Here I cut them and salt them a bit so that the excess water and some of the bitterness out.

 

Meanwhile slice the onions, cut the watermelon, chop the mint or parsley, and measure out the feta chunks.

I like to bring the dressing elements, water, vinegar and sugar to a simmer, just to dissolve it well.

Add all the ingredients except the feta together and blend so all is coated and well mixed.
I add the feta last so it doesn't dissolve into the dressing.

This salad gives you a feeling of cool refreshment just to look at it!

Biography of my grandma
Emma Block
From Germany with Love tells the story of my grandma, Emma Block, growing up in a little town in Baden/ Würtemberg, Germany near Heidelberg named Steinsfurt. Then at the age of 15 immigrating to the United States, taking a train with one of her sisters and brothers to Hamburg and sailing the Atlantic with other hope filled Germans wanting to make a life in the "New World". It was not easy but with good values learned in her German upbringing made a full life, had a wonderful family with lots of fun and celebration including the great German meals.
