Ingredients:

1b. Chicken (like Rotiserre Chicken)

1 cup Celery sliced
1 Orange cut in cubes
1 Apple cut into small slices and halved
1/2 cup Purple Onion diced (optional)


Dressing:
1/2 cup Mayonnaise
1/2 cup Sour Cream
1 tablespoon Dusseldorf or Dijon stylke Mustard
2 tablespoons honey
2 tablespoons Lemon Juice
1/2 teaspoons Poppy Seeds

Topping:
Dried Cranberries (Craisins)
2 tablespoons Sliced Almonds Toasted

This 1200 watt version does such a good job of making a puree so it is extra smooth and creamy, This model has twice the power of the original.

Shred the chicken into bite size pieces. Cut all the vegetables and place them in a stainless bowl in piles.

For the dressing, blend all the ingredients together in a separate bowl and mix well.

Add the dressing and toss all ingredients together to coat well

Here I served it on a bed of lettuce leaves with some garnish, like raspberries, beets, cucumbers and boiled eggs that were on hand.

Here I was using a similar chicken salad to make a sandwich or lettuce wraps.
I used some marinated cucumbers for flavor. I added chopped purple onions to the salad this time.

 

To make the sandwich I did a layer of lettuce, chicken salad and then some marinated cucumbers.

 

For lettuce wraps I just put a scoop on iceburg lettuce cups, and garnished them with cucumbers.

Biography of my grandma
Emma Block
From Germany with Love tells the story of my grandma, Emma Block, growing up in a little town in Baden/ Würtemberg, Germany near Heidelberg named Steinsfurt. Then at the age of 15 immigrating to the United States, taking a train with one of her sisters and brothers to Hamburg and sailing the Atlantic with other hope filled Germans wanting to make a life in the "New World". It was not easy but with good values learned in her German upbringing made a full life, had a wonderful family with lots of fun and celebration including the great German meals.
