More German Potato Pancake Recipes

 

Cauliflower Kartoffelpuffer
Cauliflower and Potato Pancake)

 

For many of us we are trying to cut down on the carbs. But we love our potato dishes, and eating is more than just sustenance, and the rewards of a satisfying meal balance the difficult tasks and stress we deal with.

Whether it is worked into a pizza crust or a roast with mashed and green beans or
a fried rice dish it can give us that food satisfaction.

Ingredients:

8 oz Cauliflower Rice
4 medium Potatoes
1 small white onion
1 egg
Small handful Parsley
1 tablespoon minced Jalapeno (optional)
4 tablespoons flour
2 tablespoons cornstarch
1 teaspoon Baking Powder

1/4 cup grated Parmesan Cheese (optional)

For Frying:
Oil and Butter

Gather your ingredients. be it fresh cauliflower or frozen cauliflower rice. peeled russet potatoes, an egg, chopped parsley and jalapeno if you want it. Then some flour, cornstarch and some baking powder. Of course salt and pepper.

Measure out about 7.5 to 8 oz of Cauliflower Rice.

Load the potatoes, cauliflower, onions, and egg into the blender.

 

Blend everything to a very fine grind....

...and place in a mixing bowl. This is what the texture looks like.

Add the flour, cornstarch, baking powder, parsley and if you like jalapeno and grated parmesan.

Heat up the frying pan with some cooking oil and try a pancake to see how it holds up. If it doesn't hold together well or spreads out too far, add a bit more flour or cornstarch.

If it browns nicely like this your ready to go.

Don't crowd the pan too much, but use a fair amount of oil to get a good browning on the pancakes. Here I used 2 tablespoons oil and 2 tablespoons butter.

Cook till they are brown on one side turn over and brown, on the other side.

I served these with fried apples and a smoked brat.
Good flavor and less Carbs.

Biography of my grandma
Emma Block
From Germany with Love tells the story of my grandma, Emma Block, growing up in a little town in Baden/ Würtemberg, Germany near Heidelberg named Steinsfurt. Then at the age of 15 immigrating to the United States, taking a train with one of her sisters and brothers to Hamburg and sailing the Atlantic with other hope filled Germans wanting to make a life in the "New World". It was not easy but with good values learned in her German upbringing made a full life, had a wonderful family with lots of fun and celebration including the great German meals.
