Ingredients:

Good quality chicken 4 lb or so

1 bunch Parsley
Garlic 4 cloves
lemon (optional)

Seasoning:
Basic Blend

Salt ,
Pepper
paprika

Custom
Hanchengewurrtz (chicken spice rub)
salt
2 tbsp pepper
1 teaspoon red pepper flakes
1 teaspoon curry
1 tsp celery salt
1/2 teaspoon Rosemary
1/2 teaspoononion granules
1/2 teaspoongarlic granules
2 tsp parsley dried
2 tb brown sugar
1/2 teaspoon of cumin
1/2 tsp cinnamon
1/2 teaspoon nutmeg


Butter or good quality oi l
For brushing and basting

Directions

Mix the spices in a bowl

Rub the spice on the chicken. Remove the gizzard and neck if there.

Put the lemon and garlic in the cavity.

Put half the onion in the cavity

Prepare the parsley, pulling off excess stems

Put the parsley in the cavity, then put the other half onion in there,

Attach the chicken to the rotisseree

Place pan under chicken to catch the juices.
Cook over coals until chicken is 140 degrees.
