Emma's Cinnamon Rolls

Ingredients:

1 cup of Mashed Potatoes.
1 tablespoon (9 grams) instant Yeast
1 cup. lukewarm Potato Water
2 slightly beaten Eggs
1 cup Flour
1 tsp. Salt
3/4 cup sugar
3/4 cup melted Shortening or Butter

Before baking, spread dough with:
1/4 cup Butter
4 tsp. cinnamon
1 cup Brown Sugar
1 cup Raisins (optional)
5-1/2 cups Flour: (To be added after the sponge mixture has risen)

For a Sticky Bun Topping;
1 cup Unsalted Butter, melted
1 teaspoon Vanilla Extract
2 1/2 cups Brown Sugar
1 1/2 cups Walnut Pieces


Powdered sugar Glaze
1 cup Powdered Sugar
1-3 tablespoons warm water.

There are several ways to bake cinnamon rolls. My grandmother use to just put them on a sheet pan,
they spread out and reminded me of what we use to get at the bakery called a "Butterhorn".

My Grandma baked them on a sheet pan, and they spread out quite a bit.

I also like to bake them in a 9 x 13 baking dish with a walnut sticky topping. When you get to the rolled up then you can jump down to here to make the Sticky Buns

 

First, boil enough potatoes to make 1 cup of mashed potatoes.
Then, dissolve the in 1/4 cup lukewarm potato water.


Add all together 1 C. mashed potatoes, 2 eggs, 1 cup flour, 1 tsp. salt, ¾ C. melted shortening, 1 cup hot potato water, yeast and potato water mixture and beat well to make a sponge to make a sponge.

 

Let this rise 2 hours. Punch it down and add 2 cups of flour into above mixture and mix.


Knead in the remainder of the flour (3 ½ cups).
You can do this in a mixer or like my grandma did right on the board.

 

Roll out the dough into a large triangle. Brush the dough with butter and sprinkle on the filling.

Then roll up the dough like a jelly roll.


If you are baking them on a sheet pan I cut them in 6 pieces.

Place separately on greased cookie sheets and let rise 30-45 min till about double in size.


When it looks like the rolls are getting close Pre heat the oven to 350-375 degrees F.
depending on how hot your oven is. If it bakes hot go with 350.
You don't want them to brown too much. You can always turn the oven down
midway or cover the pan with foil if it browns too quickly.

You can push your finger on the dough and if it springs back too quickly let them rise a bit more.
If it takes a few seconds to bounce back it is ready.



Pre heat the oven to 375 degrees F.

Bake for 25-30 min. until golden brown and about 210 degrees F internal temp.

When they are finished baking, brush with a powdered sugar glaze,
1 cup of powdered sugar blended with 1-3 tablespoons warm water.
These have the look of what we use to call a "Buttehorn"

 

To Make
Walnut Sticky Buns

If you are baking them in a 13 x 9 baking dish cut the dough in 12 pieces.

 

Melt the butter in a pan, add the brown sugar and vanilla.

  • Pour the Brown sugar glaze in the 9x13 baking dish.
    and add the walnut pieces.

 

Place the cut pieces into the baking dish and leave in a warm place to rise.

I covered it with another baking dish to keep the draft off.
You can also cover them with a kitchen towel if you want,
or leave them in the open, it just might take a little longer to rise.
You can also keep in an oven with the oven light on.

 

It will take about 30 to 45 min to double in size.


Pre heat the oven to 350-375 degrees F.
depending on how hot your oven is. If it bakes hot go with 350.
You don't want them to brown too much. You can always turn the oven down
midway or cover the pan with foil if it browns too quickly.

Bake for 25-30 min. until golden brown and about 210 degrees F internal temp.

Lay a pan on top of the rolls after they cool for 10 min or so, and invert the pan so the rols are sticky side up.

Biography of my grandma
Emma Block
From Germany with Love tells the story of my grandma, Emma Block, growing up in a little town in Baden/ Würtemberg, Germany near Heidelberg named Steinsfurt. Then at the age of 15 immigrating to the United States, taking a train with one of her sisters and brothers to Hamburg and sailing the Atlantic with other hope filled Germans wanting to make a life in the "New World". It was not easy but with good values learned in her German upbringing made a full life, had a wonderful family with lots of fun and celebration including the great German meals.
