The 3 leaf clovers are easy to find but a 4 leaf is rare. If you find one it's considered good luck just like a good friend is hard to find and lucky to have. |

It also took on a religious significance. Apparently one of the few things that Eve took with her when she left the Garden of Eden was a 4-leaf clover. |
For 12 smoked salmon toasts;
Ingredients:
Slices of marbled rye bread
1 /2 cup cream cream cheese
4 oz cured smoked salmon, Lox style
1/2 cup chopped red onion or shallots
Fresh dill weed

1. Toast the marbled rye slices |
2. Flatten the slices with a rolling pin. |
3. Using a clover cookie press cut toast clovers. |
Depending on the size of your cookie stamp judge how many you can get from a slice and adjust the amount of toast. |
4. Mince the onions or shallots and smoked salmon lox. Place a dab of cream cheese on the toast then top with a little salmon, onons and then finish with a sprig of dill weed. |
I served these for a brunch with some cucumber pickles and pickled eggs.
