Ray's Sauerkraut

1 large can of Sauerkraut (Ray prefer's Gundelsheim Sauerkraut 4 Smoked Pork Chops |

Drain Sauerkraut, and cook for 30 minutes in 1 liter or about 4 cups of water.
This is a way to mellow the flavor of the kraut and leech the excess salt out.
Drain the cooked sauerkraut
Chop 6 strips of bacon into small chunks and fry to sweat out some bacon fat.
*Tip* cut the bacon frozen it is easier.
Add the flour to the bacon fat, blend in and stir for 30 seconds.
Drain and cook in 1 liter ( approx 4 cups of water) for 30 minutes. Drain cooked sauerkraut. Add 1 cup of water, bring to a boil and
stir abover ingredients together.Serve with mashed potatoes and smoked pork chops.
