German Pickled Potato Salad

Ingredients:

2 lbs fingerling potatoes
Pickling solution:
1 quart water
2 tablespoons Kosher salt
1tablespoon Corriander Seed
1 tablespoon dill seed
1tablespoon black peppercorns
4 slit garlic cloves
6 or so springs of fresh dill


1 medium onion
5 thick slices of bacon
1 Cup chopped onion

Mix dressing ingredients in measuring cup:
1 / 4 Cup wine vinegar
1 / 4 Cup water
1 / 4 Cup sugar

Use to taste: salt and pepper

1. Pickle Potatoes for 1 week in the pickling solution. Remove and cut off
any soft spots.

2. Boil the potatoes for 10 minutes or until lightly cooked. test with a fork or knife.
drain and cool slightly, and cut into small chunks.

3. Fry the bacon, until cooked and rendered fat. Then add onions and cook
till soft. Add the potatoes and brown lightly and add the dressing. simmer for
5 minutes until dressing is absorbed.
