BBQ Zuchinni and Red Onions
with Balsamic Dressing

For 6 -9 people

2 purple onions
6 zuchinni

balsamic dressing;
1/4 cup organic extra virgin olive oil
1/3 cup organic balsamic vinegar
2 TB organic Dijon mustard
1 tsp minced garlic
1 tsp freshly ground black pepper
1 tsp worcestershire

Peel onions and cut in large 1 inch slices
Place in oven safe pan, sprinkle with balsamic dressing, salt and pepper.

Roast in 375 degree oven for 30 minutes. 

Onions should be starting to get soft but still in tact.

Cut Zuchinni in half the long way and place on cookie sheet.
Sprinkle with balsamic dressing, salt and pepper.

Roast in 375 degree oven for 15 minutes. Zuchinni will be tender but still a bit crisp.

Cool vegetables for a bit , even overnight.

Place on medium heat on the BBQ to get a little char and to heat up is all.

( this picture shows a lot more than the recipe calls for, but you can do large quantities this way)

Serves nicely in a pan next to the meat.
