Szeged Pork and Sauerkraut Goulash

Ingredients: 1 lb Pork Loin,shoulder or boneless ribs.

This is similar to a dish you would get in Germany called a Szeged Goulash, from the Szeged region of Hungary. |
Note: if you use lean boneless pork loin you have a low calorie and low fat meal ...Seriously. The dumplings can be made with Egg Beater or egg whites, and they are mostly good potato that is loaded with fiber. The broth consistency instead of a gravy thickened with fat and flour also reduces the heaviness. |
Directions:
1. Add all the ingredients in a crockpot or dutch oven and simmer for 2 - 3 hours or until pork is tender.
2. Follow the recipe for the dumplings.
3. To serve place several ribs in the bowl, spoon in some vegetables and top with some kraut.
Top with dumpling, and then ladel broth to fill bowl.
