SOUPS AND CASSEROLES
~~~~~~~~~~~~~~~~~~~ I included several other soup recipes that are
not in the book in this section. The soups were
pretty simple so here are some more challenging soups.
Gefulte Noodles
These were our family favorite. They also go by the name Maultaschen. These ravioli like noodles are stuffed with ground beef and other goodiesand then simmered for 2 hours. Usually you don't simmer pasta that long
but in this case it makes it so much better.
Check out also frying the noodles the next day for breakfast.

This is a classic and my grandma would make similar with all kinds of vegetables from the garden.

Making the Potato soup in the book is pretty
straight forward. This is a technique that works well for many German cream soups
wether it is bean soup, asparagus or brocolli.
