Rote Grütze
The "Ruby Jewel" of Summer
Desserts

Rote Grütze

Vanilla Sauce

Cheesecake topped with
Rote Grüetz

I don't provide a specific recipe for this but It is the same idea as for the
layered Rote Grütze recipe.

Top a Käsekuchen
or a Torte

This is done the same way as you would the Erdbeeren Tortenboden using the Rote Grütze instead.

Other ways to use Rote Grütze

I talk about the many different ways to use this wonderful dish as a topping or side.

Rhubarb Strawberry Compote
with
Quarkschaum

This is another Summer Fruit compote similar that is also an extraordianry flavor

Overlooked Recipe:
When we think about the foods our German grandma and other ancestors made for us, most of my friends think of the Sauerbraten, Goulash, Schnitzel, Kuchens and Strudels. One that for some reason got by me and many of us is often considered Germany's National Dessert by some.
It is called Rote Grütze!

German Words can be Tricky

I have seen this for ages but I thought when I saw Rote Grütze,
it was pronounced "Rot Grutz" which didn’t sound pretty, especially for a dessert!

However I realized.... ohhh in the German language you always pronounce the “e” on the end of words. Rota Grutza ….and WOW, that sounds almost poetic and good name for a song or movie or someones stage name …as well as a dessert!

Discovering a hidden Treasure.
I recently saw a newsletter by German Girl in America and she talked about Fruit Soup,
which also sounded just ok, but it is great, but then I stumbled on Rote Grütze again
and wow I discovered how incredible this is!
The multi layered flavors are very diffrent than just a fruit compote, because of the
Sweet and tart different dimensions and spice that dazzle!z
Also the brilliant red colors that are the "Rote" are jewel like
and make this dish a thing of beauty.

Dish for All Occasions
In Germany, Rote Grütze isn’t just dessert. It’s a midday pick-me-up, a light supper on a warm evening, or even a breakfast treat when spooned over yogurt or muesli. Pair it with vanilla ice cream for a child’s delight, or serve it in elegant glassware for dinner guests.

Rote Grütze
with
Vanilla Sauce

Rote Gruetze with Vanilla Sauce

This is a wonderful and versatile dessert that is so robust in flavor.

The beauty of Rote Grütze is its flexibility. Use whatever berries you have—blackberries, raspberries, strawberries, currants, or even plums. Depending on your mood you can add all kinds of flavorings, wine, brandy, lemon juic. Also a hint of cinnamon or lemon zest for brightness. It’s forgiving, flavorful, and—most importantly—made to be enjoyed, not just admired in the fridge.

We all have experienced watching those berries in the fridge we got a good deal on so we bought the big one. This is a good way to use those berries and give them a second life.
The Rote Grütze has a good long shelf life.

Rote Grütze
Layered with
Vanilla Quark Cream

(Wackelpudding style)

Rote Gruetze layered with Vanilla Quark Cream (Wackelpuddiing Style)

I love the comeback of gelatin desserts and salads.
This is even better than just a wiggly bowl of jello though.
The Rote Grütze is such a fresh sweet- tart flavor and the
Quark or Vanilla Yogurt Cream as I normally use,
blends so nicely with this.

This doesn't have to be an overly calorie laden dish either which we like.
I use non-fat Greek yogurt sometimes and alternative sweetners.

Besides all these cool things,
I love the fact that Jello like dishes are often called
Wackelpudding!
Now who says the Germans don't have a sense of humor.

No Bake Individual Kasekuchens
Topped with Rote Grütze

This has all the great flavor of a baked cheese cake, and it keeps the house cool in the summer.
and you can make as many little individual ones as you want.
Instead of baking it with eggs to set it I use gelatin. Both styles have their purpose.

Chesecake topped with Rote Gruetze.

You can use the Jellied Rote Grütze base to top a Kaese Kuchen (cheese cake)

Cheesecake topped with Rote Gruetze.

Or on top of Cakes and Tortes

Torte topped with Jellied Rote Gruetze.

or a Torte like how I make this Erdbeeren (strawberries) Tortenboden

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~`
Also many other basic uses for the topping
It is also wonderful to put on yogurt, cottage cheese, on Ice Cream,
On oatmeal for a flavor punch and granola adding a crunch to the sweet and tart flavors.
and... you can use it in place of
a cranberry sauce for a turkey or chicken dinner, even a roast pork or duck Rote Grütz would pair nicely.
Rhubarb Strawberry Compote
with
Quarkschaum
Rhubarb with Quarkschaum or Meringue topping.
Rhubarb and Strawberry are also a match cooked up in heaven,
just as 2 opposites often attract,
this is a blend that movies are made of.
A perfect spectrum of tart and sweet,
with zing and brightness.
The Quarkschaum
(which basically means a whipped topping with Quark, which is like a mild sour cream)
is a nice topping with structure that is a blend of custard,
Quark (I use puree of cottage cheese in this recipe) and meringue to fluff it up
.
This base also can be used for many things that you would use whipped cream or frosting on.
from tortes to pies.
