Green German Potato Salad

For hundreds and hundreds of years bratwurst was a bratwurst.
There were variations but not like what
was about to come as a result of a major world war.

The same with Good Ole, German Potato Salad.
We need to get out greens ...so this is one way to do it and I LOVE

A Brief History of Currywurst

"Steak for the Common Man"

This is just a start with this wonderful history,
the more I read the more fascinating this story becomes.
But I had to say, OK it's time to publish, we will just have to add more later.

Many things come out of necessity.
The war left lots of foods scarce.
The quality of the bratwurst maybe was not so good either,
and needed a bit of dressing up.

Here comes the introduction of Curry and Bratwurst!

Curry and Bratwurst to many of us seems about as mismatched as a
a Goulash Burrito ,
or Sauerkraut Lasagna.

Curry what?

There was a time in Germany that you could probably never find curry.

Post WW2 when Germany was in shambles and food was scarce,

This women had an idea....

Herta Heuwer
Herta Heuwer

From the Rubble Comes A New Dish That
Becomes Loved around the world.

Copied by Thousands
and
has become a National Treasure

A lady who was a "Trümmerfrau" ( sounds like TRU- mare- frau) meaning a "A Rubble Lady" that helped sort through and restore the rubble of a destroyed city of Berlin, named Herta Heuwer (pronounced like HOO-ver or I also heard it HO-ver) was practicing the common art of bartering. My dad in WW2 said he traded chocolate bar rations to house wives in France for fresh meat that the soldiers had a hard time getting. Herta traded some spirits with British soldiers stationed in Berlin for curry spice and she also got Worcestershire sauce likely from the British.

She mixed the two and added some other seasonings and came up with a great tasting sauce
and she couldn't call it catsup but since it was spicy like chili she called it "Chillup". I wonder if she didn't use American Catsup in the sauce also, because why else would Herta name her sauce, a modified version of Catsup

It was great over bratwurst, so she sold it on the streets and it was referred to as
"Steak for the Common Man". and it became an immediate hit!
In time other folks copied her idea and now there are Currywurst stands all over Berlin, and in other parts of the country.

With so many tourists it became an internationally loved food. Berlin has a museum dedicated to Herta and Currywurst.

Here is the spot that Herta opened a small Imbiss (snack shop) selling Currywurst, on the corner of
Kantstraße and Kaiser-Friedrich-Straße in West Berlin.
in 1949. A plaque is mounted in her honor.

Herta opened her stand Sept 4 1949.

She kept the recipe to her sauce a secret, and even Kraft tried to buy it but Herta didn't divulge.
The secret ingredient blend went to the grave with her.

She lived till almost 90, and is a national hero. There is a Currywurst Museum where she is honored

Even Google has honored Herta on Sept 4 with a Google doodle seen all around the world

So How do you make Currywurst?

I confess, I am just learning how, and there are so many recipes out there.

Which Wurst to Use?

You can use any wurst. But in Germany it tends to be a softer one like a Weisswurst.
usually it isn't smoked sausage.

I have read In one part of Berlin they use skin on sausages and in another part
they are skinless.

Is there a special way to prepare it?

In Germany it is almost traditionally fried in a little oil to crisp it as well as heat it.

What about the Sauce ?

The sauce is generally made with sated onions, tomato sauce or catsup, or both, Worcestershire Sauce
applesauce, curry and other seasonings and spices depending on the individual taste.

How is it served and what with?

Currywurst is a "Street Food" so it is usually served simply, cut in slices and doused with Curry Catsup,
sprinkled with curry powder, then a side of fries topped with a bit of mayonnaise.
A simple wooden fork is the tool you get for your sumptuous snack.
The usual sides are fries with Mayo, or German Potato Salad.
it is usually served in a frilled paper boat.

What to look for in Sausage making. First of all if you are going to do any volume you want to make sure you have a strong motor.
Some are under a thousand watts and some are up to 2000 watts. It is good for most of the parts to be metal and stainless steel if possible however certain things like the grinding plates are a little thick to be all stainless. Just make sure you clean them properly.

Hakka Vertical Sausage Stuffer

This is the way to go to stuff a large amount of sausage. The vertical sausage stuffer is what the serious Bratwurst makers use.

This holds 3 liters and 4 different sizes of sausage nozzels

Natural Hog Casings
by Overseas Casing

Very good I like to use these.

DeWied Natural Sheep Casing

These are preferred by many Bratwurst makers as they are more tender than the hog casing. You need to read up on how to work with them. If you read the negative reviews they seem like folks didn't know how to use them very well.

 "A Lausbua muss er sei"

He's Gotta be Cheeky"or Fun Loving

by Marilena

Yesterday I was at my gran's and she asked me:
"What kind of boys do you like?"
Answering I told her: I'm open to all sorts,
I like to take a wide view.
But there is one thing on which I won't be moved!"

I'm open to all sorts, I like to take a wide view. But there is one thing on which I won't be moved!
He can be tall, he can be short, but he has to be cheeky.

Whether he's fat, whether he's thin, That doesn't matter to me. If he's rich – wouldn't be so bad, If he's poor – that's no matter. I have no special wishes, just – he's gotta be cheeky.

Yes, there are many great boys,
but they've got no nerve.
I much prefer those who like a lark from time to time.

Ein Lied für Mama
Song for Mama

By Geschwister Niederbacher

This is a song for you, who's always standing in the first row
A song just for you, who's you're always sleeping with us*
This is a song for you, who's you sit in your house for hours and burn**
A song for you, because you know all our lyrics
Are you from Hamburg or Berlin?
Are you from Zurich or are you from Vienna?
Are you from Bielefeld, Dresden, Heilbronn?
Doesn't matter! Somehow we've won your hearts
And because of you we've been merciless punks for years
And so we'd like to thank ourselves!
