A Spring Spargel Dinner

with Creamy Herb Sauce

A celebration of Spring, and Spargel season in Germany. (Spargelzeit). Eggs celebrating the birth of another Spring, a creamy herb sauce filled with fresh herbs, and other goodies that go well with this spread, tomatoes, avocado, and boiled potatoes.

Our German Recipe Cookbook

I get very excited for this season, celebrating the Spring
with asparagus, which is best this time of year,
especially if you can find local.

also making this very special green sauce
that is on the theme of "Frankfurter Greunersosse"
that is one of the region's specialties.

It is traditionally served with potatoes and boiled eggs.
I wanted to include Asparagus
because it is Asparagus season in Germany (Spargelzeit)

Also celebrating Germany's diversity in their cuisine, I
wanted to make a blend of this Frankfurter Green Sauce,
with a Tzatziki sauce. The Donnerkebab is one of the
most popular sandwiches in Germany.

Ingredients:

My 2022 Creamy Green Sauce

1 Shallot (2 tablespoons minced)
3 cloves Fresh garlic
1 oz Parsley
1 oz Fresh Dill Weed
Mint
1 English Cucumber
1 pint Sour Cream or Greek style yogurt (thick)
Juice of 1 lemon

Dash of sugar
1/2 teaspoon salt

These measurements on the herbs is approximate.

The recipe for this sauce I made is simple. In the Frankfurter Greuner sosse traditionally uses 7 special herbs while this sauce I use just 3. Two of them are my all time favorite, parsley and dill weed. The other I used in celebration of a favorite middle eastern sauce Tzatziki. (pronounced Zahh-Zikki. think of how you say the z in pizza with a slight t sound)

 

I love this ULU knife I use it to mince up herbs all the time. It is sort of like a hand held food processor. It keeps everything piled neatly so you can chop it easily. You can also use a knife or food processor for this.

Shred the cucumber, no need to peel it is an English cucumber, salt it with a few shakes and let it sit while you get other things ready for your Spring dinner. You

 

Then Squeeze the cucumber in a towel to drain out excess moisture and dry out the cucumber.

 

Mix all together with the sour cream or Greek Yogurt and add the lemon juice, sugar, salt and pepper.

 

 

 

Place in a nice serving bowl and garnish with a bit of a fresh herb.

 

I roasted some asparagus

 

Made a platter of 7 minute boiled eggs ( the center of the yolk is still a bit creamy) and some vine ripened tomatoes (..so the label said) avocado, boiled potatoes, chopped green onions and some nice rustic wheat bread.
You can be creative with these items.

Biography of my grandma
Emma Block
From Germany with Love tells the story of my grandma, Emma Block, growing up in a little town in Baden/ Würtemberg, Germany near Heidelberg named Steinsfurt. Then at the age of 15 immigrating to the United States, taking a train with one of her sisters and brothers to Hamburg and sailing the Atlantic with other hope filled Germans wanting to make a life in the "New World". It was not easy but with good values learned in her German upbringing made a full life, had a wonderful family with lots of fun and celebration including the great German meals.
