Schweinemett

This is a simple sausage that you fry up like a sausage patty. You can also smoke this and it will be similar to what the Germans call "Mettwurst", which is a spredable sauasage similar to a liverwurst or Braunschweiger that is good smeared on crackers and bread.

1 pound lean pork, (such as pork loin)
1 pound fat pork (from the shoulder)
20 grams salt (1 and 1/2 Tblsp.)
3 grams pepper ( 1/2 teasp.)
1 gram Glutalin ( this is a binder and is optional)

Cut the meat in 1 inch cubes. Get them in the fridge to be cold. Then add the spices and mix it well. Then grind them twice through a fine grinder. The second time add some crushed ice to keep it cold.

This is a basic recipe, you can add spices such as garlic or caraway seeds which is popular in many parts of Germany.
