1 pint large curd cottage cheese CONDIMENTS: Scallions Toasted Whole wheat or French bread |
Here is a morale-booster for the calorie conscious.
Put one pint LARGE curd cottage cheese in the container of an electric blender. Blend until smooth and creamy. Mound the whipped cheese on a serving plate. Surround with small dishes of thinly sliced scallions (including 2 inches of the green tops), sliced black olives, crumbled crisp bacon, chopped parsley, chives, or dill, caraway seed, and chopped toasted hazelnuts or blanched almonds. Serve with toasted thinly sliced whole wheat or French bread.
To eat, spread toast with the cheese and top with the condiments of your choice. Makes 4 servings.
