Hähnchen-Brotaufstrich

A Creamy German Chicken Spread with Celery, Chives & Cornichons

Makes about 4 cups (950 ml)

Ingredients

3 cups (450 g) cooked chicken breast, finely diced or shredded, or 2 (12.5 oz/354 g) cans premium chicken breast, well drained

1½ cups (360 ml) Feinkost Creme

⅓ cup (50 g) finely diced celery

¼ cup (40 g) finely diced cornichons or dill pickles

2 tablespoons (6 g) finely chopped fresh chives

1 hard-boiled egg, finely chopped

1 teaspoon (5 ml) fresh lemon juice

1 teaspoon (5 ml) mild Dijon or German mustard

½ teaspoon (1 g) sweet paprika

¼ teaspoon (0.5 g) freshly ground white pepper

Salt, to taste

Directions

  1. Finely dice or shred the chicken into small bite-sized pieces. If using canned chicken, drain well and gently separate it into flakes with a fork.
  2. In a large bowl, combine the Feinkost Creme, lemon juice, Dijon mustard, paprika, and white pepper until smooth.
  3. Fold in the chicken, celery, cornichons, chives, and chopped egg. Stir gently until everything is evenly coated while maintaining a slightly chunky texture.
  4. Taste and season with salt and additional white pepper, if needed.
  5. Cover and refrigerate for at least 1 hour before serving to allow the flavors to blend.
  6. Serve generously spread on slices of Mischbrot, Roggenbrot, or fresh Brötchen. Garnish with a sprinkle of fresh chives and serve with cucumber slices, radishes, or crisp pickles as part of a traditional German Abendbrot.
