Cucumber Salad
|
INGREDIENTS: 1 large Cucumber, sliced thin Red onion slices, about 1/2 small red onion 1 teaspoon salt 1/4 Cup water 1/4 cup Vinegar, apple cider, or rice wine, 2 Tblespoons sugar Fresh pepper Dil weed. Fresh or dry For a creamy salad; 1/4 cup Yogurt or sour cream |
Peel the cucumber or cut part of the skin off. Here I am using a channel Cutter |

You can accomplish a similar thing with a fork , |

Here is how the slice looks with a channel cutter , see how part of the skin is left on. You can also use a vegetable peeler and create something similar. |

Here is another way to slice. This tool helps make them very very thin. |

Take the slices and place them in a bowl and mix in the salt | |
Let them sit for an hour or two and drain, if the cucumbers tase salty then rinse them with water to wash some of the salt off | |
I like to Dry them with a towel, if I am making a creamy cucumber salad | |
Make the dressing. I like to make it in a glass measuring cup you use only one container. | |
Blend in the dressing and the onins, dill and fresh cracked pepper; |

for a creamy cucumber salad drain the vinegar dressing and blend in the sour cream or yogurt. |
