German Meatloaf
with
Curry Catsup Glaze

Ingredients:

1 lb. Ground Beef, Turkey, Pork, or combination
1/2 cup dried Bread slices, soaked in milk or water
1/2 cup Oatmeal
1 Egg beaten
1 cup fine diced Onion
1/2 cup losely packed diced Parsley
2 tablespoons Catsup

Fun Additions:
1/2 cup diced Celery
1/2 cup diced Bell Pepper, any color
1/2 fine diced Carrot

1 cup Curry Catsup for glaze
Simple Recipe:
1/3 cup Catsup
1/3 cup Tomato Salsa
2 tablespoons BBQ sauce
2 Tablespoons Curry Powder

Directions:

1. Gather your ingredients together, measure them out.

2. In a large bowl mix all the ingredients together. Do not over mix but enough to so the mixture
holds together well but not compact.

But onions are a real great addition ...

3. German recipes like to saute their onions that go into a frikadeller and similar recipes also is a good choice for meatlloaf. You can saute all the vegetables as well which brings out more flavor. Adding the onions and parsley add a lot to the meatloaf.

4. You can also saute onions, with celery, peppers, carrots, and parsley to bring out more flavor.
When the vegetables cool you can mix them in.

5. Formed loaf on the plank and ready to cook, glaze or no glaze. For the meatloaf on planks. I don't soak them in water like some suggest.
I never found the need to. I also reuse the planks even running them through the dishwasher.

6. Combine the ingredients for a simple curry catsup. Glaze the meatloaf and start the BBQ, close the lid and let it pre heat as if you were using an oven. I don't use a thermometer but it needs to feel like about 325 to 375 degrees.

Make sure the plank is not under the fire.
This is called offset cooking. whether coals or gas, keep the fire away from direct flames underneath. Put the cover down on the BBQ and let it slowly cook with the fire or charcoal and wood and let it add a bit of smoke. This will take about 45 min to an hour.

When the meatloaf reaches 160 degrees it is done. Let it rest for 10 minutes and slice and serve.
Just as the meatloaf is open to al kinds of flavor profiles, so are the sides. I like mashed potatoes, either by themselves, or mashed with cauliflower or other vegetables. Creamed spinach is also a good choice.When you BBQ, while the meatloaf is cooking offeset from the direct fire, you can bbq vegetable kebabs, and fruit, like apples or peaches to go with it.
