Strawberry Pretzel Salad

Ingredients:
For the Crust:
1.5 cups tiny pretzel twists or crunchy pretzels of any kind.
1/8  cup granulated sugar
4 tablespoons unsalted butter melted

For the Filling:
8 ounces cream cheese softened
4 oz Sour Cream of Yogurt, whole or low fat
1/2   cup Sugar
1 teaspoon Vanilla Extract

For the Topping:

*1- 6 oz package Strawberry flavored Jell-o 6 ounces
1 cups boiling water
8 ounces fresh frozen sliced strawberries
2 tablespoons Sugar
a splash of Vanilla

*Subsitute for Jello
1 cup Water
1 tablspoons unflavored Gelatin
Strawberry flavoring or similar flavor, even orange works.

Pre-heat oven to 350 degrees

1 I crushed them in a plastic storage bag to a texture like granola.
Blend it with butter and sugar and pour into a baking dish. so it is in a thin layer but not spread out.
Bake for 15 minutes until it crisps up almost like a peanut brittle. Youll get some nice chunks this way.

2. Next slice, sugar and vanilla the strawberries and let them sit for a minute to juice.
Mix the gelatin using very hot water to dissolve it well and then add the flavoring if using plain gelatin, let it cool a bit and they blend in with the strawberries

Note; A package usually says 2 cups of hot water, but I use 1, it is a little firmer but it sets up well.

3. Soften the cream cheese and whip it till smooth and fold in the yogurt.
a hand mixer works nice to really fluff it up.

4. Layer the parfait glasses with a layer of the pretzel crumbs, then the cream filling, and then the strawberry and Jello topping. Let it set in the fridge till firm, about an hour at least.

5. Top the parfaits or the mold with some of the cream filling, and sprinkle some of the pretzle crumbs on top, and for a nice touch, a pretzel thin or a few of the sticks for garnish. A mint leaf tooks nice also.
