Berliner Schusterjungen

("Shoemaker boys from Berlin" a Berlin delicacy)

 

INGREDIENTS:
2 cups rye flour
1 cups All purpose Flour
1/3 cup sourdough starter.
2 tsp. malt (extract)
1/4 Cup lard, shortening or oil
1 teasp. caraway (ground/powdered)
1packet,1 tablsp (7 grams)yeast
1.5 teasp. salt
3/4 Cups water (lukewarm/handhot)

INSTRUCTIONS:
1. Mix yeast and warm water, add remaining ingredients. 2. make soft dough to round ball, leave on warm place for 5 minutes

3. Press flat with lots of flour, press to 2 cm (about 3/ 4 inch) split into 30 pieces, punch a little dent/hole in the middle. 25 minutes 425 -450 Fahrenheit (240 Celsius)
(this keeps the crust from blistering) 4.Optional toppings Roll in brush with butter and roll in caraway seeds Roll in Rye flour Coat with lard and melted "Harzer"-Cheese ( Hand Cheese)
