Making your own
Thruingian Roastbratwurst

Ingredients: for 10 pounds (approximate)

2 lb. 3 oz. of Pork Belly
2 lb. 3 oz, of Pork Shoulder
2 eggs
1 heaping tsp. White pepper
3 Tbsp. Salt
1/2 tsp Nutmeg
1/2 tsp. caraway
1/2 tsp. coriander
2-3 Tblsp. Rubbed Marjoram
Zest from 1/2 Lemon

16-20 ft of casings


Sausage making Equipment

KitchenAid FGA Food Grinder Attachment...

Rinse the casings in warm water, then soak them in lukewarm water for 20 minutes.

Rinse the pork, pat it dry and cut into large chunks.

Grind pork

Mix ground pork with eggs and seasonings, knead well until well mixed.

Put the mix through the grinder one more time and into the casings.

Twist sausages how large you want them.
