Ingredients;
4 strips of bacon diced
1 large onion
minced
1 teas black pepper
1 jar sauerkraut ( around 3 cups, it doesn't have to be exact.)
4 cups of 1/2 inch diced white cabbage
1 diced red or green apple small dice
1 cup beer or white wine
(optional)
2 cups of chicken or beef stock
4 Smoked German Brats
4 Pretzel Brat Buns
Green onions or any diced onion to sprinkle on top.
1. Sweat the bacon and then add the onions in your favorite Dutch Oven or large pot,
saute till the onions are soft.
2. Add the cabbage and saute for a few minutes to brown it.
3.Then add the apple and cook till tender. ( i don't add the apples with the cabbage as they have a lot of moisture and will keep the cabbage from browning.
4. Add the sauerkraut and 2 cups of beef or chicken stock, and the German sausages.
you can add a cup or so of beer or wine if you want also
4. Simmer for 10 more minutes on low. Careful not to simmer at too high a
temperature or the brats will burst. It is nice to have the cabbage still a bit crunchy.
5. When your ready to serve, heat the pretzel buns and add a nce smoky brat and top with sauerkraut.
I finished it off this time with green onions, but any other kind of onions works also.
