Spicy Ranch Rub
A mixture of spices called a "rub" spread on the meat a head of time will add a lot of flavor, and color to the meat, and also tenderize it. Here is my chef friend Les Wolford's favorite Rub. This recipe makes a lot but it lasts for a long time and is great to have handy in your pantry. It also makes excellent gifts. The interesting thing about this recipe is that it has ground coffee in it. You don't taste the coffee, but it has this effect of bringing a new dimension to all the other flavors." For 10 lbs. of Meat; 1/2 cup brown sugar 1/2 cup white sugar 1/4 C salt 2 T Coarse Pepper 3 to 4 chipotle(chi-pote-lee) chilli's (other chili powders may be substituted) 1/4 C ground to a powder dark roast Italian coffee Mix all ingredients and store in a glass Jar.
