Marrow Balls (Markklosschen)

This is a good way to use the wonderful gelatin or marrow that is in bones. If you are in the supermarket and see some bones that have the center exposed, GET THEM. They are usually cheap and it is fun to work with. This rich marrow that is prized by chefs.

The Germans as well as many of the Eastern Europeans are great at making all kinds of dumplings.

3 ozs beef marrow ( The center of the beef bones)
2 eggs
2 rolls
1 Tbls flour
4 Tbls milk
salt,
pepper
nutmeg

Melt marrow over low heat. Soak rolls in milk and squeeze dry. Mix together all ingredients and shape into dumplings. Place in soup stock and let simmer until they float to the surface.
