Salsas!
BASIC TOMATO SALSAS
For chip dipping, Quesadilla's etc.
These are quick and simple recipes.
FRESH TOMATO SALSA
3 medium tomatoes, or 6 plum tomatoes
4 green onions, thinly sliced - white and green parts
2 small garlic cloves, finely chopped
squeeze of fresh lime juice , lemon works well also.
salt and pepper
Cut tomatoes in half and place on a foiled sheet pan in the hot oven for 10 min.
Take out and the peel should slip right off.
Dice up tomatoes and put into the mixing bowl.
Add remaining ingredients.
Here are some things to add to it to enhance your salsa.
1 Tbl. chopped hot peppers, such as jalapeno, serrano, even habenero.(Take the seeds out if you don’t like it as spicy.)
A couple pinches of ground cumin *
Fresh chopped cilantro (for most people this is a must)
Oregano
Chopped bell pepper (green ,yellow, or red)
Finely grated lime peel
*Try roasting the cumin seed or heat it in a non stick skillet on low for a min. and grinding it in a coffee grinder.
Here is a recipe for a good salsa if you can’t get good fresh tomatoes;
ZESTY TOMATO SALSA
1 14 oz.can stewed or diced tomatoes
1 small 8oz. can of tomato sauce
½ C finely diced white or green onion
1 small can ortega chopped chilies
1 Tbl. lime juice.
½ t sugar
1 t garlic powder
½ t cayenne pepper
½ t oregano
½ t cumin
Salt to taste.
Heat all ingredients in the microwave for 5 min.
Now for a serving suggestion: Warm your corn chips in the oven for a few minutes. This will make them tender and more flavorful.

Mango Salsa
1.1 cup mango -- diced
2.1/4 cup red pepper -- diced
3.1/4 cup green onions or purple onion -- diced
4.1/4 cup cilantro, fresh - chopped
5.3 tablespoons lime juice,
6.1 T honey
7.Fresh 1 tablespoon jalapeno or serrano, (remove seeds) -- minced
8.1/8 teaspoon salt and pepper
DIRECTIONS;
Mix all ingredients together and chill.
Serve in a bowl on the side, Let everyone spoon as as much as they want on.
