The History of Brussels Sprouts  |  Recipes

By Stephen Block Published: 2012, | Basic Brussels Sprout Preparation, roasted or steamed. | Prep time: | Cook time: 8 min | Total time: Yield: 15-20 Sprouts 4 servings) | Serving size: 4- 5 | Calories per serving: | Fat per serving:

Ingredients:

1 lb or 15-20 Brussels Sprouts
2 tblsp olive oil
1 teaspoon seasoning salt
1 lemon for juice (optional)

4 Garlic cloves (optional)

Steamed or Pan Braised | Oven Roasted

Some people swear by putting an x in the thick stem part so the heat will get inside and cook the sprout more evenly.

Simmer ( pan braise) the sprouts for 5 - 8 min. in just a 1/ 2 inch of water. This is not lime boiling but more like a cross between steaming and boiling.

Drain in a strainer and shock with cold water. Cut the sprouts in half and lengthwise if desired.

Toss with olive oil and season salt and serve.

Oven Roasted Sprouts

Wash the sprouts and toss with olive oil and season salt

Place the sprouts in an oven proof dish.
Add garlic cloves is you wish

Roast the sprouts at 350 degrees F for 15 to 20 min until just tender. You can check them by removing one and cutting it or touch feel and judge if it is tender. Cut the garlic and squeeze it on the sprouts and mix to flavor.
