Lentil Stew

Ingredients:
For the Stock:

1 Ham Shank
2 quarts Water or Chicken Stock
3 Bay Leaves
6 Peppercorns
3 Cloves
1 tablespoon Onion Flakes

For the Soup:
Suppengrun,
2 cups chopped Leek
2 cups chopped Celery Heart, with green tops (stalks)
2 cups chopped carrot
handful of chopped parsely

6 cloves fresh Garlic
4 strips bacon chopped
1 cup Green Lentils
1 cup Red Lentils
2 tablespoons Hungarian Paprika

Salt and Pepper to taste

Toppings for the lentil Soup
1 lb sausages; like
8 oz Smoked bratwurst
8 oz Weisswurst
4 cups roughly chopped cabbage
3 -4 Yellow or Red Skin Potatoes

Serve with a nice topping vinegar.

Directions:

First I make the stock with a ham shank ( not a ham hock) and then I use 3 quarts water, and simmered it for 2 to 3 hours
In the morning.

Make the Suppengruen

1. Cut the carrots into half wheels, dice up the celery root, Cut the leeks into small pieces.
The Suppengreun is ready for the soup. I reserve the chopped parsley for the finish.

2. Mince up the garlic, Saute the diced bacon in a nice large pot or Dutch oven till some fat is rendered. Add the garlic and saute to open up the flavors.

3. Saute the vegetables (Supengrun) for a few minutes to coat with the oil and flavors and soften a bit. Lots of folks put the parsley in the suppengruen, I chose not to this time.

5. Add the stock and simmer for 20 min until the vegetables are getting tender.

6. Add 1 cup of each of the red and green lentils. Simmer on low for another 20 min and turn off the pot. You don't want the lentils to overcook.

7. Put the potatoes on to boil in another pan and boil till tender about 20 min.

8. Brown the sausages, and after that I will saute the cabbage in a the leftover fat with salt and pepper.

9. I scored the top of the Ham Shank and broiled it in the air fryerl for 10-15 min to crisp the skin.

For the New Years Eve Partly I assembled all the "Lucky Charms", Lentils. Cabbage and Sausages, Ham Shank onto a bowl platter.
