German Chili Goulash

Ingredients:

1 lb ground or small 1/4 inch dice Beef
1 lb ground or small 1/4 inch dice Pork
1 lb ground or small 1/4 inch dice dark meat Turkey

Spice mix:
Hungarian Paprika
cumin ground
caraway ground
garlic powder
Onion powder

8 oz Salt pork
3 cups chopped onions
3 tablespoons chopped garlic
1 tablespoon crumbled Marjoram or Oregano
2 quart stock (2 boxes works)
1 large can tomato sauce, crushed tomatoes or marinara
1 cup your favorite tomato salsa

Beans:
1 can Red Beans
2 cans Pinto Beans
1 can Black Beans

1 whole green Jalapeno

Directions:

Chop the salt pork into very small pieces.

Put the different meats in a frying pan and start to brown on medium heat. As the meat cooks break it apart with wooden
spoon or potato masher into lumps.

While the meat is browning in the large Dutch Oven or your favorite chili pot start to cook the salt pork to render some fat.

When the meat is browned add the spices and continue to cook to marry the meat with the spices and cook
till very aromatic.

When the salt pork has cooked and rendered some fat add the onions and garlic and cook on low for 30 minutes or so on very low and cook till onions are almost caramelized.

Add the Stock and the crushed tomato, tomato sauce, marinara , and salsa.
Bring to a simmer and cook for 1-2 hours on very low.

Add the beans and the whole jalpeno and continue to cook for another hour or so.
Add water to keep nice and soupy. Taste for salt.
Chop up Jalapeno and add if you like it more spicy.
