Cucumber and Potato Salad

Ingredients:
3 cups cucumbers, peeled and seeded
4 potatoes, large, (1 ½ pounds)
½ cup peanut oil or oil of choice
5 hardcooked egg, yolks and whites separate
½ cup peanut butter of choice
1 teaspoon salt (optional)
salt and pepper, to taste
2 tablespoons lemon juice
¼ cup water
Instructions:
Peel potatoes and in long, thin sections. Each about 3 inches long and ½ inch wide. Fry the potato slices in oil until brown and soft. Drain well and set aside.
Make salad dressing by crushing the egg yolks and combining them with the peanut butter, salad, pepper, lemon juice and water.
Slice the egg whites and mix them with the cucumbers and the dressing.
Serve at room temperature.
