Focaccia Bread Sandwiches
These sandwiches are very popular in our caterings, because the bread is so flavorful and festive. The sandwiches go together fast because the bread is baked on a sheet pan or a cookie sheet and you can make one big sandwich and cut into triangles.
1. Mix all ingredients in a large bowl or container. Cover with towel and set to rise . 2. Mix warm water with yeast , sugar and salt ,half of the flour and cornmeal in a large bowl or container and set to rise. 3. When doubled add the remaining ingredients till you have a smooth dough but not too heavy. 4. Pour the dough onto the greased cookie sheets or sheet pans, smoothe out and let rise till double in size again. ( note 50 servings will take a full restaurant sheet pan 100 sandwiches will take 2 sheet pans. ) 5. Melt the butter, and mix in Italian sauce . Brush the top of the focaccia bread and sprinkle with the Shredded Mozzeralla. Bake at 350 degrees for 20 to 30 minutes toll lightly browned. Take out of the oven and brush again with butter Italian sauce mix. Let cool. Slice the bread in half and spread the sandwhich dressing on both sides. Spread around chopped lettuce that has been tossed with Italian dressing. Lay on sliced turkey, ham , roast beef, sliced swiss and cheddar or american cheese. If desired top with tomatoes. Mark off sandwhich into rows
Cut the sandwich into squares like you would a cake Cut each square into triangles and stick with a tooth pic. Place on serving trays. * Note If they are done a day ahead, omit the tomatoes. and wrap 2 portions in plastic wrap.
