Guten Tag,

It has been a month since I sent you a newsletter. I apologize for that. We were up north helping my sister in law and husband move.


We hauled stuff in the 100 plus temperatures during the day to storage and his uncle's Alpaca Farm , and BBQed big dinners at night. It was hard but fun.

I got to see my sister in Reno, NV and my parents where they are living now. We had a wonderful visit.

So in this week's newsletter.....

We had some requests for German Potato Salad and other German salads, so I put a few in here, and I will add some more next week.

Also a nice German Pot Roasted Chicken called Gebratenes Huhn, that is good whether it is cold or hot outside.

Grandma Block's Hot Bacon Salad
(also called Wilted Lettuce Salad)

This is a salad I remember from when I was growing up at my grandmother's house in Portland, Oregon.

“Grandma Block often made this dressing when lettuce was plentiful (preferably leaf-lettuce) she would call it “Wilted Lettuce.”

The dark-green leaves were put into a large bowl to be mixed with the hot dressing, then served in small hand-turned wooden salad bowls that Grandpa Block had made in his workshop. The bowls were stacked, pyramid-style, on the kitchen counter well before dinner-time.

When I went through the kitchen on my way to play in the back yard, I would see them there and look forward to that tangy salad.

Much later on, when I had my restaurant, I used the same dressing, modified just a little, as my House Dressing.

It was the most-requested recipe I had. I preferred to serve it with Romaine lettuce or fresh raw spinach. It also makes a good dressing for German potato salad.”

This is great for you to print out and keep in a notebook or put on the fridge in the kitchen when you make this salad.

Spargel und Eier Salat
Layered asparagus and egg salad

This is another salad that you can use the hot bacon dressing in. You can be creative with your presentation on this. I like to cut the asparagus up into 2 inch chunks and layer the ingredients in a bowl or on a platter. You can also make individual salads and leave the asparagus in spears and top with the dressing and then the eggs, bacon and tomato.

Hot German Potato Salad

Here is another salad that you can make with the hot bacon dressing.
It is always a hit and you can make permanent friends with this salad.
It is a simple recipe but it is the techniques that make this perfect.

You want to start with cooked potatoes, but not mushy. They should still be a bit firm.

Have you ever wondered why this salad is called German Potato Salad?


I am not sure anyone knows. In Germany they don't call it German Potato Salad, just as in Philadelphia they don't call it Philadelphia Cheese steak. German immigrants were known to use this hot bacon dressing on potatoes and salad so it soon got the name German potato salad.

The other funny thing is until fairly recently potatoes were considered something you fed prisoners or livestock.

A crisis in Germany and an official order from the King of Germany is what it took for the Deutsche to accept the lowly Kartoffel.

Egg and Sparrow Grass Salad

Here again is an example of a German salad that uses pineapple in it for flavor.

This salad has asparagus, ( some historians feel that the word asparagus comes from sparrow-grass) hard boiled eggs, pineapple and frozen peas.

Gebratenes Huhn

German style Pot Roasted Chicken

Gebratenes is a word the Germans use for roasting or grilling. Huhn (close to Hen) is a word for chicken.

Even though you may still be in the "Dog days of Summer" this can be a Summer dish and not heat up the kitchen if you cook it on an outside burner or heat it up on the stove and then transfer it right to your propane BBQ where you can finish it for a few hours.
Also the crockpot will do a very nice job with this.

The spices used are reminiscent of Sauerbraten but no marinating is necessary. Since I cook for my wife that is watching calories I pulled back the skin of the chicken so the fat doesn't baste it like I of course LOVE! I put some no salt seasoning on the breast and then continued. This way we could cook for both sets of tastes.

Kitchen Tool Review

The Wooden Spoon

One of my favorite and most used kitchen tools.
I love the feel and sturdiness of a wooden spoon. I can use it in any
non-stick pan, The flat bottom is nice so you can scrape the bottom
to loosen food as it is cooking.
I don't mind paying for a good wooden spoon. I paid 12 dollars for mine
It seems like a lot for a spoon but I use it every day and I love it!

Ooh my, feel in love with the Knoblauchcremesuppe (garlic cream soup). Please can you tell me what's in it? I would love to make big bowls of this. Thanks for all the news letters. My mother-in-law used to make a main dish she said was a family recipe that she called "strudela". It was a strudel type dough streched very thin and then rolled up into a tube shape. It then was cut into sections and cooked on top of frying potatoes and pok chops.Are there any simular recipes available?

I've been trying to find the amounts of each different seasoning to put together for the traditional Bavarian seasoning mix.

I know that the ingredients are thyme, rosemary, garlic, bay leaf, sage & crushed brown mustard.

Forced Biscuits

well not sure if you can help me but am trying to find a recipe my late Grandma used to make when I was younger, it was a biscuit or cookie recipe it was two different coloured biscuits she used to have two huge glass jars for these on the mantle in the kitchen they tasted like cinamon or nutmeg very spicey also long narrow shape which she used to run a fork down to make a pattern if any one might know them would be much appreciated , have asked family members they all remember but no one has the recipe they think they were called forced biscuits not sure though, also she migrated here to Australia in the 1800,s from the Silesia region so if that helps maybe they are a regional recipe, they went to the Barossa Valley In South Australia a big wine growing area and they farmed there ,hope you can help me with this as have been looking for a long time for this recipe , brings back so many memories from my childhood also they were so delicious,Many Thanks Stephen Best Wishes Ally.

Flour. I thought I had saved it but can't find it anymore.
It sounded so delicious and I wanted to make a batch but just can't remember all the

My mother came over after WW2. She made a "doughnut" that was like a doughnut and had the middle intack and very thin. She called it groughfin. After it was deep fried, she would put it into a paper sack, mixxed with sugar and cinnamin, and shake them to coat them. Ever hear of something like that? She's old and said she used a Betty Crocker sweet dough recipe to make these. Any help? I would be sad to not have a recipe like this to hand down to my kids......James

Hello Stephen....
I may have asked this before, but here goes:
There was a German restaurant we used to go to
called The Castle Tavern....they used to serve
a particular kind of burger on rye bread SCRUMPTIOUS but they've changed hands
and the burgers are just burgers now. They also
served roast beef sandwiches on pumperknickle
b read....ooooooh yum, my mouth is watering!
But I've never figured out the burger recipe or found
a place that makes them like that...would you know if
this is a particular german style recipe for burger?
