Your host Stephen Block

What's going on at the Kitchen Project

Hope you are having a great Summer
so far

I can only imagine the fun BBQs you are doing,

and we have a lot more to come,
where you experience, sun.... the great sweet smell of the smoke,....
tangy glazes on meats...... that nice char on colorful fresh fruits and vegetables,
some from your garden!

I would love to hear from you so we can compare notes and I can add
to my summer BBQ project.

Here's what BBQ things I've been up to....

My BBQ project this summer is to add new things to my grilling experience
like adding a Pizza Stone on my Kamado grill, more plank cooking,
and more desserts on the grill.

I would love to know what YOUR BBQ projects will be for this summer.

BBQ St Louis Ribs......cauliflower and sweet baby peppers

BBQ Pork Steaks, a St Louis Favorite, I had no idea, and going to do more.

Brats, with Asparagus, Peppers, Asparagus
and Corn on the Cobb

Even BBQ Stuffed Peppers on a Plank

~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~`
Also.....not what you would expect in the Summer......
"Baking" Desserts on the Fly
Lately I have been working a lot with simple cakes ( in German "Kuchen"), to have a nice sweet, for after dinner, watching a movie, or with afternoon coffee,
that will use fresh summer fruits that are available.
It will be fresh, out of the oven, natural, not full of preservatives,
fill the house with aroma.
and leave a wonderful taste in your mouth!
I know it's hot but you don't have to heat up the kitchen with your big oven,
This German Newsletter is about making these
Fruit Kuchen's on the Fly
You can make Mini-Kuchen's easy in the Air Fryer
These are like cupcakes but you can make them in small ramekins
like these shortcakes
Many times it uses up tail ends of fruits so they don’t get wasted.
I wanted to make it so I don’t have to hunt for recipes, and materials and have bowls everywhere,
So I worked on some “Rules of Thumb” recipes
This is my "Rule of Thumb" recipe that I tape on my cupboard in
the kitchen for easy reference.
Also some mind maps that I can visualize the set up easy.
I want to make it so you can whip it out while your making dinner.
For instance, If I want to make a cake I make a mind map, I’ll iusually need 2 bowls,
one for wet and one for dry.
For the dry I need, flour, baking powder, sugar and salt,
Here I am using Self Rising Flour, so I have 2 less steps.
Self Rising Flour
1 cup All Purpose Flour
1 1/2 teaspoons Baking Powder
1/2 teaspoon salt
You dont add extra if your substituting Self Rising Flour.
just use the same quantity of flour.
For the wet I see here yogurt, milk maybe, and butter or oil
From there I can add what I want.
Add a bit more milk if necessary or you can add an beaten egg .....
until the dough looks something like this......
Just mix the ingredients.
Bake in the Air Fryer for 10-12 minutes on 400 degrees F
I use these cute ramekins, but you can also just make drop biscuits style shortcakes.
Here are the finished shortcakes
In minutes you have fresh strawberry shortcake!
I will be working all summer on this project to develop
"Rule of Thumb"
Recipes for
"On the Fly Baking"
Like our ancestors did in the kitchen
before written recipes that
constrain our intuition.
and for the summer, ones that I can do in the air fryer or bbq.
Thanks for reading!
Again I would love to hear from you!
